Cast Iron Skillet Rosemary and Parmesan Potatoes topped with crumbled, crispy bacon and scallion. I was almost hesitant to top these potatoes with Parmesan, bacon and scallion since it covered the beautiful pattern. However, these tasted soooo good and adding cheese and bacon has never failed me yet.

I used a madolin to slice the potatoes. Then tossed in olive oil, 3 garlic cloves, paprika, rosemary, thyme, salt and pepper. Layered and then cooked. Added bacon and parm during the last portion of the cook and then topped with green onion.

Cooked them on the pitbarrel over royaloakcharcoal

This was a cook about 3 years ago. I’m terrible with times and temperatures. I my heart and cook on feel, so, I can’t help you too much there.
