I wanted to revisit my Christmas Eve Double Smoked Ham from last year. I made this with a Blackberry Honey Whiskey Glaze and it was so good. I used a dusting of rainierfoods Blackberry Smokey Honey Rub and smoked to 120°, then added my Blackberry Honey Whiskey Glaze and finished to 140°.

INGREDIENTS

BLACKBERRY HONEY WHISKEY HAM GLAZE

3/4 cup blackberry jam
1/4 cup honey
2 tbsp. dark brown sugar
1/4 cup Dijon mustard
1/3 cup tullamoredewus whiskey
1 tsp. ground fresh ginger
1/4 tsp. ground clove
Juice of 1 lemon
Salt and pepper to taste
DIRECTIONS

While ham is cooking, add all Ham Glaze ingredients to a sauce pan and simmer until slightly reduced. Toss that goodness on the ham if you can avoid sitting on the couch with a spoon and eating it straight from the pot like a weirdo because it’s so good.
