Cheerwine Pulled Pork
1 Pork Picnic Shoulder (or Boston Butt)
2 liter bottle Cheerwine (you won’t need all of this)
Kosher Salt for Dry Brining (1/2 Tsp/lb of meat)

Dry Rub:
3/4 cup dark brown sugar
3/4 cup turbinado sugar
1/4 cup paprika
1/4 cup smoked paprika
1/4 cup garlic powder
2 tablespoons chipotle powder
2 tablespoons ground black pepper
2 tablespoons ground ginger powder
2 tablespoons onion powder
2 teaspoons rosemary powder
1 teaspoon dry mustard powder

Cheerwine BBQ Sauce:
1 1/2 Cups Ketchup
1 Cup Cheerwine
3 Tbs Brown Sugar
1/3 Cup Apple Cider Vinegar
1 Tbs Dark Molasses
1/2 Tsp Ground Mustard
1/2 Tsp Ground Ginger
3/4 Tbs Gochujang Paste
1 tsp Paprika
Salt to taste

1. Start by scoring the skin in a grid pattern.
2. Rub the pork with salt (1/2 tsp/lb), be sure to get salt into the cuts you’ve made in the skin.
3. Place in fridge overnight to dry brine.
4. The next morning, inject the shoulder with cheer wine every couple of inches, work in pattern to maximize amount injected.
5. Rub the pork shoulder with your binder of choice (I use yellow mustard) and apple rub to exposed meat. I don’t apply binder or rub to skin.
6. Light your PBC using standard lighting procedures. I added Cherrywood.
7. Hang or grate your shoulder until 165° IT. I drilled a hole through the bone and hung it.
8. Once at 165°, remove from hook and grate. You can wrap at this point in butchers paper or foil with 1 cup Cheerwine, but you will sacrifice some of the crispy skin you’ve developed. Or you can leave on the grate unwrapped. Cook to 205° IT. (If you wrap, you can quickly place it in your oven on broil to crisp up the skin). This is a good time to start making the sauce.
9. Shred meat, pouring any accumulated juices back into the shredded pork.

Cheerwine BBQ Sauce
1. Mix all ingredients in a sauce pan and simmer until sugar is dissolved and well mixed.
